Dou Ban Jiang (Chili Bean Sauce) Fish

Vinayak’s favorite fish dish also happens to be one of my favorite fish dishes to make, because 1. it is super easy, and 2. it is delicious. I’d often pair it with some broccoli dipped in oyster sauce or seasoned with dashi. Broccoli isn’t Vinayak’s favorite and so one of the ways I get him to eat it is by making extra sauce for the fish and covering the broccoli in his plate with the extra sauce. It works wonders in getting him to eat his veggies!

Ingredients (when paired with another veggie dish, yields 4 servings):

  • 1 lb fish – I like getting frozen Swai fillet from 99 Ranch, but you can easily swap out the fish for other types of fish such as cod or catfish
  • 3 tablespoons of ketchup
  • 1 tablespoon of chili bean sauce
  • 1 teaspoon of white balsamic vinegar
  • 1 teaspoon of marsala dry wine (or any cooking wine would work honestly)
  • 3-4 cloves of garlic (add more or less to your liking!)
  • dash of white pepper
  • 1-2 green onions for taste or garnish

Directions:

Step 1: Cut the fish into about 4″ chunks. Mince the garlic cloves, and mix the ketchup, chili bean sauce, vinegar, wine, and white pepper in a bowl.

Step 2: In a large wok, heat some oil and sauté the garlic until fragrant. Then add the sauce and stir until the garlic and sauce has fully mixed.

Step 3: Once the sauce is fragrant, add the fish chunks. Thoroughly cook the fish in the sauce.

Step 4: Once the fish is thoroughly cooked, add green onions for garnish or taste!

Now just serve over rice with some veggies! 🙂
